Another quick & easy recipe.
* 6 potatoes
* 1 cup veg. oil
* 8 oz. shredded cheddar cheese
* 1/4 cup chopped cooked bacon
* 1/4 cup chopped green onions.
* 1 16oz. container sour cream
* sea salt & garlic pepper
1. Preheat oven to 375 and lightly grease a 9X13 pan
2. Pierce potatoes with a fork and microwave on high until they are tender.
approx. 10 minutes
3.Cut the potatoes in half and scoop out the insides, leaving 1/4" of the potato inside the shell.
4. Heat the oil to 365 inside the deep fryer and fry the potatoes in the oil for five minutes, afterwards drain on paper towels.
5.Season your potato skins with the salt & garlic pepper then fill them with the cheese, onions, and bacon. And then bake for 7 minutes or until the cheese melts & serve with sour cream
*If you want to cut back a little on the fat then instead of frying bake the skins in the oven at 400 for approx. 45 minutes, then season add your fillings and bake for another five minutes.
